Okay, these things are seriously AMAZING and they are super easy to make.
Coconut oil in coffee? Yes!
Okay, it all started about a year ago when Jason and I started putting coconut oil in our coffee to reap the health benefits of coconut oil (heart health, immunity, & metabolism). Plain coconut oil was okay in our coffee, but it definitely didn’t WOW us. Unfortunately, we didn’t stick with it because, let’s face it, plain coconut oil in coffee isn’t exciting.
That has now changed with my Cocomint Drop creation.
Basically, I use coconut oil and peppermint oil to create yummy drops of goodness to elevate our morning coffee and with all the added health benefits coconut oil and peppermint oil! Double win!
If you are trying to move away from creamers (especially all the fake stuff found in most flavored creamers – yuck), this might help your transition. The coconut oil makes it creamy and the peppermint oil gives a subtle flavor boost.
This is so easy! It literally takes minutes to prepare (plus about 10 minutes in the fridge to harden). Store these in a glass mason jar in the fridge and pop one in your morning coffee for some creamy, peppermint-y goodness.
Seriously, my husband cannot get enough of these. I have to make them every week (good thing they are easy)!
Silicon ice cube tray (18 drops)
½ cup Coconut Oil
15 – 20 drops Peppermint Oil
Melt coconut oil in a double boiler over low heat. Add drops of peppermint oil. Evenly pour into silicone trays. Place in refrigerator for 10 – 15 (or until harden). Take out tray and pop out dots. Store in fridge in a glass jar. Add one drop to your morning coffee and ENJOY!
